Francesco Lucati, a new-generation chef from Puglia, grew up with cuisine in his heart, nurtured by family traditions. After experiences across Italy, he carries with him a simple philosophy: to honor raw ingredients and transform them into emotions. For him, couscous becomes a universal language, capable of uniting cultures and telling stories of conviviality.
At SUQSU, he finds this same vision: a project where food, design, and art merge into a single experience. Today, as Consulting Chef, he guides SUQSU on a journey that renews an ancient dish, making it contemporary and close to new generations.
A dish-sculpture designed for the colder months: Roses of the Mediterranean is born from the embrace of red couscous fragrant and enveloping and the delicacy of sea bream shaped into rose petals. A touch of spicy harissa ignites the finish, leaving a luminous memory of spices and sea.
